用途:廣泛用于肉制品、面制品及飲料、奶制品等食品行業(yè)領(lǐng)域。在肉制產(chǎn)品加工過程中可以減少肉制品的蒸煮損失,增加出品率,改善肉制品的切片性,增加肉制品彈性;在面制品中增強(qiáng)面條的韌性,提高面食的耐煮性,使面制品的口感細(xì)膩、潤滑;在豆奶中能起到懸浮、乳化、穩(wěn)定的作用,可防止產(chǎn)品分層,改善口感。
